It's a 4. 5 hectare south facing site at 240m elevation on calcareous soils, and the vines have an average age 40 years. The site is sustainably farmed with no use of chemical herbicides or pesticides. The fruit undergoes maceration and alcoholic fermentation in temperature controlled vats for an average period of 14 days. Malolactic conversion
