Sophia, 2020 Sicilia Focused and lifted with notesThe wine Sophia has been an ongoing test to find out which grapes macerate best. It has been established by Giardino that Greco is exactly that. This sat on the skins for a full year in terracotta amphorae before being pressed to acacia and chestnut casks to rest for 6 months.
