Based on an idea that had germinated during a festival in Rome in 2018, we blended several brews of Saison de l'Ermite aged 1 and a half years in foudre, with a blend of 1, 2 and 3 year old lambics in which 5 forrest fruits (blackcurrant, raspberry, red currant, wild blueberry and blackberry) were fermented.
