Jajatoes, 2021 Sale totally delicious wineLori of the Rhne has a process that highlights the beauty of making wine by the Med. Always made using explicit terroir expressions, or more experimental field blends, but never without purpose, this being the latter. A biodynamic blend bursting with acidity and balance galvanised by the rich limestone soils and sea breeze. The grapes spent a day in the fridge and pressed over 6hrs, co fermented in fibreglass.
